Gluten-free Caprese cake

Caprese cake without lactose
For a caprese cake without lactose just do without butter, using in its place vegetable margarine. With a food processor first chop the almonds and then the chocolate, mix the two compounds obtained and set aside. Beat the butter and sugar with a mixer, add the eggs, flour, salt, cocoa, yeast and rum. Work for a few minutes, add the nuts and chocolate and mix all the ingredients until they are well blended. Line a round mould with baking paper and pour the mixture. Bake in a hot oven at 160 ºC for about 55 minutes. Remove from the oven and sprinkle with vanilla powdered sugar to taste and decorate it to your liking.
Vegan caprese cake
The vegan caprese cake, among the variations of caprese cake is also ideal for those who are intolerant to eggs and lactose. In a bowl, just mix flour, cocoa and baking powder sifted with almond flour and sugar. Then add the water, oil and almond aroma, and finally the melted chocolate. Then pour into a mold with a diameter of 24 cm coated with baking paper and bake in a static preheated oven at 180°C for about 30-40 minutes. Allow to cool completely before removing from the mould.
